Simi Cakes & Confections

Hello Everyone!

Have you checked out Edible Artists Network Magazine yet?  They have amazing tutorials and you can order the magazine on-line or in print!  This month I have a double tutorial in the magazine on how to create a Houndstooth Cake and a Icing Paper Flower Cake both made with Icing Images, their iiDesigns on-line program, and their amazing new Sweet Accents die cutting and embossing machine.  The machine is so much fun to work with and you can use isomalt with it as an extra bonus!

Tip of the Week

This week we continue with tips from Wayne Steinkopf.  He is the co-owner of Swank Cake Design in Cary, NC along with Chuck Hamilton and their focus is to create visually stunning wedding cakes with an emphasis on freshness and great taste.    Wayne is a gifted teacher specializing high-end cake design at Swank and travels to teach all over the United States.  There are so many classes to choose from including the Victor Victorian cake, gorgeous shoes, amazing Proud Peacock Class, and the Corset Cake to name a few.  Check out Wayne and Swank Design and sign up for a class!

Part 2 of Wayne’s Tips:

~ To help keep track of all your molds and cutters, make a sample piece of each one with gumpaste and store in scrapbooking containers. Take a picture with your smart phone for reference when shopping so you don’t buy duplicates. You can also use the sample pieces when laying out a new design, mix and match to see which ones go together!

~ To achieve a beautiful vintage look on painted gumpaste pieces, try painting the piece in gold first, then highlight with silver – or vice versa! Take it a step further, by dry dusting the crevices with a darker color, such as copper or bronze.
~ To avoid distorting cut out gumpaste appliqués, monograms, or lace pieces, try popping them in the freezer for a couple of minutes. When you pull them out of the freezer you will have about 30 seconds to get them on the cake before they start to soften. Work quick and your appliqués will look just as neat on the cake as they did when you cut them out or molded them!

Until Next Time…

Keep Life Sweet,
