I am a Certified Professional Chocolatier, Cake Designer, Sugar Artist, and International Instructor.  I graduated  from the prestigious Ecole Chocolat School of the Chocolate Arts and have the distinction as the youngest student to ever complete the program.  I trained and interned with top sugar artists and chefs in New York City, Orlando, and West Palm Beach.  My company was chosen for the ABC’s Extreme Makeover: Home Edition Space Coast.  I teach and demonstrate sugar and cake decorating to professionals and amateurs for the last 5 years at venues such as Keiser University,  ICES Convention and Days of Sharing, Culinary Schools, restaurants, at the Festival of Chocolate, at cake clubs and cake supply stores,  judging and sponsoring the Florida ICED Cake Competition, and am a Sugar Arts Institute Founding Certified Instructor for Julie Bashore.  I design and manufacture my own line of sugar art tools as well as writing articles published in American Cake Decorating Magazine, CakeFu.com, SugarArtsInstitute.com and featured on About.com, in the Florida Today Newspaper, Today in Brevard Television Show and the ICES Magazine.  I released my first DVD for cake decorators in the fall of 2012.  In my spare time I like to volunteer at the Brevard Zoo and volunteer at ICES Day’s of Sharing.  I co-found the Brevard Cake Artist’s Club and my shop, Simi Cakes & Confections (Pronounced See-Me) is located in Palm Bay, Fl.

    Great blog you have here, Simi! I do not do enough of this as I should to keep in contact with the sugar art world. So, I am inspired to do something. But I will have to figure out what it is!

    I just had to share that Sidney is SO incredibly talented. The Amtrak P-42 Engine cake with the Manatee driving that she made for my son Gabe is just UNREAL. The detailing is amazing. Thank you SO much for making his birthday so special. If anyone is looking for one talented cake designer – look no further than Simi Cakes and Sidney!

    You impressed me before, but there is so much more. Thanks Sidney, I enjoyed the gallery experience. Tapped on to see if you did anything simple for say an Eagle Ceremony but I think you are much beyond Publix : )
