News!

Important venue change:  That Takes the Cake Sugar Art Show & Cake Competition has moved locations.  The new address is Highland Mall – 6001 Airport Blvd, Austin, TX 78752.  Please note that the location is now closer to the host hotel and conveniently located just north of Downtown Austin.  And don’t forget that on-line registration for the cake competition and classes is Feb 16!  So get your registration in ASAP! 

Cake Cruise 2014

I am so proud to have been chosen as an instructor for Cake Cruise 2014!  They are very pleased to announce that they are now taking reservations.  Make sure you tell them “Sidney” sent you on your application.
CakeCruise 2014 will depart Ft Lauderdale FL on November 15, 2014 for a 7 day Eastern Caribbean cruise on Holland America’s Westerdam.
Instructors will include returning instructors 
Norman R. Davis with Zane Beg (The Sweet Life), Martha Hebert with Becky Guidry (Sweet Southern Ladies) and introducing new Cake Cruise Instructors Kathleen LangeRuth Rickey and Sidney Galpern.  There will be a wide range of classes for beginners to advanced and I’ll be teaching isomalt, chocolate, gumpaste and fondant. 

Special:  not sure how much longer it will last, but as a result of the reservations for CakeCruise so far, they are still able to apply the promo special… That’s a reduced deposit of $175 (instead of $350) per person (plus PCPP if selected), $150 stateroom credit for ocean-view and balcony rooms, $250 stateroom credit for suites. Not sure how much longer that will be available. Book now for the promo, you have until August 31 to cancel to get your deposit back.

Tip of the Week

Sidney: How do you color gelatin pieces?

Vincent:  There are actually multiple ways to color gelatin.

1) The most basic is to add color directly to the original gelatin. I use airbrush colors to do this because they are mix easily into the gelatin. You can use diluted gel colors but you then may have to deal with lumps. You do not want lumps of color in the gelatin.

For more complicated pieces you can use multiple colors of gelatin on your mold. Then you would use a thin layer of clear gelatin as a top layer to make sure the piece is united.

After your gelatin piece has dried there are techniques to enhance you piece.

2) You can create a paint using 4 to 1 gelatin and adding more color to it. it will look deeper than it will be when dried. the advantage to this technique is when your paint dries the color is trapped in the gelatin.

3) You can dilute gel colors with vodka, Everclear, or lemon extract and use that to paint the piece. You could enhance the color by adding powder to the paint also. This has an advantage that the color you see is the color you get. But gelatin is not porous so the color will be on the surface. to much handling, such as creating rose petals, will smear the color to some extent.

4) You can use edible markers to draw on the piece, very useful for butterflies.

5) Using a thin line of piping gel you can attach disco dust to a piece. good for edging ribbons or adding bling to a butterfly.

6) You can carefully airbrush color onto the gelatin. as long as you don’t soak the piece it works well. Again when dried it sits on the surface of the piece. But airbrush colors are more stable than the gel colors so they resist smearing.

Online registration ends this Friday, Jan 17 for the Florida ICES Mini Classes running Jan 24-26 in Orlando, FL!  The vendor hall will be open to the public for $5 (or free with your registration).  The vendor hall will be open Fri 10am-7pm, Sat 10am-10pm, and Sunday 10-4pm.  To shop and attend at the Saturday Night of Sharing & Dessert Social the cost will be $15.

Hello everyone,

Happy New Year!  So excited to get the year started off with great cakes, wonderful classes, cake shows and an awesome sale!

First cake of the year is my Rockabilly Cake created with Icing Images suspended in Simi Isomalt with a blown sugar/isomalt heart topper and pulled wings, with a few pulled roses and the background is cut with the Sweet Accents Die Cutting Machine.  I used three dies:  1. Designer Borders for the waves, 2. Quilted Lattice & Confetti, and 3. Ribbon Banners for the “Love” sign.  I used Elite Colors by The Sugar Art to paint the printed pieces and edges of the flowers and Wedding Gold to paint the rope from the Simi Rope Mold.  The colors really pop which was what I was going for!  Isomalt brings out the most amazing colors and allows your Icing Images paper another dimension.

Hello Everyone!

  Tip of the Week

This week’s tip of the week comes from Josie Jennings, owner of Icing on the Cake Decorating Products in Ocala, FL.  You can find her website at http://icingonthecakedecoratingproducts.com/ 

Josie’s Tip:  I highly suggest two on-line resources for cake decorators.  The first is for bakers who want their own cake decorating business.  Check out  http://sellingcakes.com/   Selling Cakes was started by Andreaetta Whaley and her husband Vondre’, aka the Cake Couple.  Andreaetta had a strong passion for baking, decorating, and selling cakes and wanted to help other bakers succeed.  In 2000, they began to develop marketing materials, ideas, and strategies for bakers.  There weren’t any resources available out there for home bakers who wanted to start a business, so next they decided to write this blog about starting out and selling cakes.  You can sign up for their blog and they will send you tips and ideas to help your business become a success.  

The second resource I suggest is  http://www.about.com/  About.com is a great resource to find out any information you may need on any subject, but especially cake decorating.  For instance just type in, “What is the difference between petal and luster dust?”  All your information is at your fingertips.  You will be on it for hours.

Happy Summer Sweet Friends!

Happy Summer Everyone!  I hope everyone had a wonderful and relaxing Memorial Weekend!  We rested and are ready to get back to work.  On Monday, June 4 we will be making Summer Treats on the local news show, Today in Brevard.  Tune in to see how to make cute little lady bug and ice cream social cake truffles.  It airs 11:30am, 4:30pm, and 10pm on WBCC-TV and a live video stream at 11:30am at www.floridatoday.com and then runs in their video section starting Tuesday.  Thank you to Producer Caroline Perez, Host Luann Manderville, and Cameraman Breuce for inviting me back for a third segment in the studio.  It has been great fun working with you all!  And watch for my blog in the next few days with an interview with producer Caroline Perez talking about video journalism and helpful hints on preparing and filming a good food segment.

Tip of the Week

We would like to thank our good friend, Certified Master Sugar Artist Ruth Rickey, for offering the tip(s) of the week for us.  Ruth is very creative with color and now has her own line of petal and luster dusts. 

 Ruth’s Dusting Tips:

  • Layering your petal dust color on leaves and flowers with many colors to give them depth and to bring them alive
  • Don’t rub too hard, light pressure in application
  • You don’t have to be perfect-nature is not perfect
  • Don’t stop at one color on your project
  • I usually finishes with aubergine (dark eggplant) color
  • When you have finished dusting your leaves dip them in a glaze to give them their lifelike appearance
  • Flowers will look better steamed than glazed

One last note she suggests, “Just do not be afraid to use your petal dusts!  They aren’t meant to live on a shelf.”

It’s been an exciting year so far!  The first of the year my Undersea Sugar Bubble cake was featured in the ICES Magazine and I was accepted to teach a demo at the ICES convention in Reno this August on blown sugar dolphins, swans, and hummingbirds.  Can’t wait to get out west!  We had a wonderful time at the Florida ICES Mini Classes in Orlando.  There were 3 days of classes with spectacular sugar teachers from all over the country.  One of the highlights of the event for me was getting to teach Norm Davis to make a sugar bubble!  It was great to see all of our cake friends and family and we roomed with our great friends!  Next we headed over to the Festival of Chocolate at the MOSI Tampa to teach a few classes in tempering, blown sugar, and chocolate garnishes.  While we were there we checked out the Cocoa Couture Fashion Show dresses.  They were actually made out of chocolate candy wrappers and real chocolate.  And from Food Network fame, Paul Joachim was creating a life size cake sculpture of a beautiful woman.  He created his structure out of PVC, cake, then a ganache icing that in the end looked like bronze.  He left the back open so everyone knew it was cake and not metal!  He even invented techniques to create her legs.  It was a beautiful piece of art!  The next Festival of Chocolate will be at the UCF Arena April 27-29.  Check them out at www.festivalofchocolate.com

And the Florida ICED is in need of Volunteers!!!! They need volunteers to help with ICED and would appreciate your amazing time to make it a great show. Cake Tip:  We use a small stick on bubble level, found in the RV section of any Wal-Mart, attached to a very straight ruler to make sure all our cakes are completely level.  Because they are so inexpensive, we put several around the bakery so we always have one close at hand.
