Hello everyone,

Happy New Year!  So excited to get the year started off with great cakes, wonderful classes, cake shows and an awesome sale!

First cake of the year is my Rockabilly Cake created with Icing Images suspended in Simi Isomalt with a blown sugar/isomalt heart topper and pulled wings, with a few pulled roses and the background is cut with the Sweet Accents Die Cutting Machine.  I used three dies:  1. Designer Borders for the waves, 2. Quilted Lattice & Confetti, and 3. Ribbon Banners for the “Love” sign.  I used Elite Colors by The Sugar Art to paint the printed pieces and edges of the flowers and Wedding Gold to paint the rope from the Simi Rope Mold.  The colors really pop which was what I was going for!  Isomalt brings out the most amazing colors and allows your Icing Images paper another dimension.

Hello Everyone!

Hope everyone had a happy and safe July 4th with their friends and family!  We are excited to get on the road this week for our cross country caking adventure!  We will see all of our cake friends in Shreveport, Las Vegas and Dallas!  Find us at the Icing on the Cake Competition & Classes, LA Day of Sharing, Sweet House Confectionary Supply in LV, Cake Camp, & Cake Carousel in Dallas!  Check our schedule below for all upcoming classes.  If you are interested in Isomalt Structure Class THIS SUNDAY in Shreveport, LA at the Icing on the Cake Competition, email me ASAP to sign up info@simicakes.com   You will be able to sign up at the show if there are seats available, just send me a quick email to let me know you are signing up so I bring enough supplies!  

We are busy finishing up our prep for fun and creative classes we will be teaching.  Most of our supplies are packed and ready to go so I have been creating a couple new classes while I’m waiting for go time.  A few of my favorite new classes I’m putting together are an isomalt Mermaid Figure Sculpting Class and Gumpaste Reef Workshop. It will incorporate beautiful musculature and anatomically correct features along with airbrushing, painting, and dusting to bring pieces alive.

Hello Everyone!

I have the honor of being invited to be on the Icing Images Design Team with Peggy Tucker, Mike Terry, Teri Tarbox, and Edna de La Cruz.  We attended the National Capitol Area Cake Show last weekend to launch a secret project that has been under wraps for more than 6 months- The Icing Images Cake Decorating System!  This is a completely portable, non-electric die cutting, embossing, food safe machine that works amazing with Icing Images Premium Icing Sheets and gumpaste.  I love printing out beautiful patterns from the iiDesigns online program and now I just pick a die cutter, place the icing sheet over the dies, sandwich them between the cutting plates and roll it through the machine to create flowers, frames, accents, and more.  It embosses beautiful patterns in the icing sheets too!  Of course, I love suspending them in isomalt!  I created this cake fast and easy with an iiDesigns Houndstooth pattern, the 6 petal flower cutters, my isomalt and some fondant!  It was fast and easy and the tutorial will be in the next issue of Edible Artists Network Magazine! http://www.edibleartistsnetwork.com/   The next picture is a cake topper I created with Simi Flex Forms©, Simi Crystal Clear Isomalt, iiDesigns on Icing Images Premium Icing Sheets and using the flower dies from the new Cake Decorating System.

  Tip of the Week

This weeks Tip of the Week is from talented cake and sugar artist Wayne Steinkopf.  He is the co-owner of Swank Cake Design in Cary, NC along with Chuck Hamilton and their focus is to create visually stunning wedding cakes with an emphasis on freshness and great taste.  Wayne is a gifted teacher and was so generous with his cake decorating tips that I’ll be posting them in three newsletters!  Wayne teaches high-end cake design at Swank and travels to teach all over the United States.  There are so many classes to choose from including the Victor Victorian cake, gorgeous shoes, amazing Proud Peacock Class, and the Corset Cake to name a few.  Check out Wayne and Swank Design and sign up for a class!

Part 1 of Wayne’s Tips:  

~ When working on styrofoam dummies, attach the dummy to your work board with a couple of nails to keep it from scooting around.


~ When smoothing fondant on a curved surface, such as a corset or football helmet, try making a fondant smoother with a piece of fondant flattened out and pinched between your fingers. Rub the surface you are trying to smooth with a light touch in quick circular motions. This will also “erase” small imperfections!

  Tip of the Week

This week’s tip of the week comes from Josie Jennings, owner of Icing on the Cake Decorating Products in Ocala, FL.  You can find her website at http://icingonthecakedecoratingproducts.com/ 

Josie’s Tip:  I highly suggest two on-line resources for cake decorators.  The first is for bakers who want their own cake decorating business.  Check out  http://sellingcakes.com/   Selling Cakes was started by Andreaetta Whaley and her husband Vondre’, aka the Cake Couple.  Andreaetta had a strong passion for baking, decorating, and selling cakes and wanted to help other bakers succeed.  In 2000, they began to develop marketing materials, ideas, and strategies for bakers.  There weren’t any resources available out there for home bakers who wanted to start a business, so next they decided to write this blog about starting out and selling cakes.  You can sign up for their blog and they will send you tips and ideas to help your business become a success.  

The second resource I suggest is  http://www.about.com/  About.com is a great resource to find out any information you may need on any subject, but especially cake decorating.  For instance just type in, “What is the difference between petal and luster dust?”  All your information is at your fingertips.  You will be on it for hours.

Happy Fall!  I’m so excited to announce my first cake decorating DVD is now available!  It’s titled Isomalt Techniques and is great video for beginners to isomalt and a refresher course for more advanced students.  On the video you’ll find step by step instructions on how to create a casting of the bubble flower in a silicone mold with Icing Images, two pulled sugar flowers (the rose and calla lily), blown bubbles, and two-tone ribbons as well as tips and tricks along the way.  Chris Kridler, owner of Sky Diary Productions, was my videographer/director and did an amazing job.  I highly recommend her for all your photography and videography needs.  Plus check out her blog and all her talents on her website: http://www.chriskridler.com/

Simi Cakes & Confections, LLC

Hello everyone,

It has been a very busy few weeks on the road!  It was wonderful to make a stop to see our incredible cake friends at Icing Images and they took us apple picking at Rinker Orchards in Winchester, VA.  It was a great fall adventure where we picked the apples right off the tree and ate them as we walked along the rows.  The trees were full because it was the first weekend of the season.  The best part was that we got to spend time with the whole Coughlin family-thank you sooooo much for your hospitality. 

It was too short a time before we had to hit the road again.  Next we were off to work at the new Sugar Arts Institute in Ephrata, PA.  The new school is located a few miles outside of Lancaster and is shaping up to be a tremendous school.  I’m told that eventually there will be 10 classes going simultaneously.  Julie and Bucky Bashore have a wonderful vision for the new school and its future in offering a degree in Cake Decorating.  We enjoyed working hard at the Level 1 & 2 Blown and Pulled Sugar Classes.  The facility was fantastic to work in with heat lights that retracted into the ceiling and huge kitchens where you had enough counter space for everyone to spread out.  We enjoyed meeting students from all over the world and seeing cake friends from the US that were taking classes as well.  I’ll be back in March to teach blown sugar again-I think it will be a little cooler then!

After that we were off to the New Jersey Sweet Treats Competition in Colonia.  It was a small new show, but we were able to connect with many cake friends, teach a wonderful group of sugar students, and enjoy the beautiful cakes in the competition.  Thank you to Get Sassie! for sponsoring our classes. I was proud of all our students for their beautiful bubbles and roses and their winnings in the cake competition.  We hope to see you again soon.

The weather was beautiful while we were in the Northeast and the leaves are beginning to change.  We visited family we don’t get to see often enough and snuck away to New York City and enjoyed shopping, great food, visiting the 911 Memorial, and the San Gennaro Festival in Little Italy.  We stayed with our cousins in NJ and played with fondant, edible glitter, and markers (shh….don’t tell their dad about the glitter).  We managed to wipe up the evidence pretty good and head out back to roast marshmallows on the new fire pit and watch the many deer that would hang out in the back yard.  

We are home for a few weeks to work with our homeschool cake class and I’ll volunteer at the Brevard Zoo all month for their Boo at the Zoo events.  We will be back on the road to teach isomalt at Ladybug Cake & Candy Supply in Connecticut on Nov 2 & 3 and then to Maryland to teach Holiday Isomalt hosted by Teri Tarbox and the MD ICES.  Can’t wait to see all our northern cake friends soon!  And then off to Europe…but more about that next time!

The Big News is the Florida Mini Classes coming to Daytona, FL on January 18, 19, and 20!  I’ll be teaching with an amazing cast of decorators including Merrie Lee Reese, Kathy Wyatt, Gayle Hewitt, Pattie Ames, Mercedes and Alex Strachwsky, Lucinda Lawson Olds, Carol Webb, Kathy Scott, Kelly Lance, Geraldine Randlesome, and Norm Davis and Zane Beg!  It will be held at the Daytona Beach Resort & Conference Center.  I’ll have classes in the mediums of isomalt, fondant, and gumpaste along with dozens of other great classes by these gifted artists.  The show is hosted by Kathy Wyatt, AWK Sales formerly A Wedding by Kathy, and Gayle Hewitt, owner of Gayle’s party Cakes & Supplies in Daytona Beach.  There will be a large vendor area, a banquet with a white elephant trade, and we are happy to announce that our wonderful sponsor, Icing Images.  I have been asked to be the Student Ambassador for the show and will be visiting high school and culinary colleges in Florida to demonstrate the sugar arts and bring awareness to the field of cake decorating.  The website will go live on Oct 15 and I’ll publish all the details as they come available.

Tip of the Week

Taking Care of your Silicone Molds

Did you know that your silicone molds don’t need any prepping?  For isomalt and chocolate just pour your ingredients in and let dry!  For fondant and gumpaste they release as well.  If you ever have trouble you can pop them in the freezer for a minute and your decoration will release.  As for cleaning all you usually need to do is wipe them out.  If they get very dirty you can place them right into the dishwasher.  Did you know you can bake cookies or little cake in your silicone molds?  Silicone molds can take heat up to 395 degrees.  You should always store your molds as flat as possible to keep their shape.  If you take care of your molds they should last ten years or more!
