News!

Important venue change:  That Takes the Cake Sugar Art Show & Cake Competition has moved locations.  The new address is Highland Mall – 6001 Airport Blvd, Austin, TX 78752.  Please note that the location is now closer to the host hotel and conveniently located just north of Downtown Austin.  And don’t forget that on-line registration for the cake competition and classes is Feb 16!  So get your registration in ASAP! 

Cake Cruise 2014

I am so proud to have been chosen as an instructor for Cake Cruise 2014!  They are very pleased to announce that they are now taking reservations.  Make sure you tell them “Sidney” sent you on your application.
CakeCruise 2014 will depart Ft Lauderdale FL on November 15, 2014 for a 7 day Eastern Caribbean cruise on Holland America’s Westerdam.
Instructors will include returning instructors 
Norman R. Davis with Zane Beg (The Sweet Life), Martha Hebert with Becky Guidry (Sweet Southern Ladies) and introducing new Cake Cruise Instructors Kathleen LangeRuth Rickey and Sidney Galpern.  There will be a wide range of classes for beginners to advanced and I’ll be teaching isomalt, chocolate, gumpaste and fondant. 

Special:  not sure how much longer it will last, but as a result of the reservations for CakeCruise so far, they are still able to apply the promo special… That’s a reduced deposit of $175 (instead of $350) per person (plus PCPP if selected), $150 stateroom credit for ocean-view and balcony rooms, $250 stateroom credit for suites. Not sure how much longer that will be available. Book now for the promo, you have until August 31 to cancel to get your deposit back.

Sidney: How do you color gelatin pieces?

Vincent:  There are actually multiple ways to color gelatin.

1) The most basic is to add color directly to the original gelatin. I use airbrush colors to do this because they are mix easily into the gelatin. You can use diluted gel colors but you then may have to deal with lumps. You do not want lumps of color in the gelatin.

For more complicated pieces you can use multiple colors of gelatin on your mold. Then you would use a thin layer of clear gelatin as a top layer to make sure the piece is united.

After your gelatin piece has dried there are techniques to enhance you piece.

2) You can create a paint using 4 to 1 gelatin and adding more color to it. it will look deeper than it will be when dried. the advantage to this technique is when your paint dries the color is trapped in the gelatin.

3) You can dilute gel colors with vodka, Everclear, or lemon extract and use that to paint the piece. You could enhance the color by adding powder to the paint also. This has an advantage that the color you see is the color you get. But gelatin is not porous so the color will be on the surface. to much handling, such as creating rose petals, will smear the color to some extent.

4) You can use edible markers to draw on the piece, very useful for butterflies.

5) Using a thin line of piping gel you can attach disco dust to a piece. good for edging ribbons or adding bling to a butterfly.

6) You can carefully airbrush color onto the gelatin. as long as you don’t soak the piece it works well. Again when dried it sits on the surface of the piece. But airbrush colors are more stable than the gel colors so they resist smearing.
